Local Specialities
Paella is Valencia’s best-known dish. It has endless variations, changing from town to town. To compound confusion a dish of saffron rice, chicken, sausage, seafood, peas and peppers, cooked in a large round pan with a flat bottom and two handles is called Paella Valenciana outside Spain. The real Paella of Valencia is more austere- the saffron flavoured and coloured rice is mixed simply, often with chicken and green peas but without sausage and pimientos.
