The historic heart of Valencia is very beautiful and still very Spanish, almost untouched by mass tourism but the city is now home to the futuristic Arts and Science centre which is fast becoming one of Spain’s top visitor attractions. The temperature in Valencia is around 26 o C during the summer months and can drop down to 12 o C during the winter months; overall Valencia has a very warm climate.
Paella is Valencia’s best-known dish. It has endless variations, changing from town to town. To compound confusion a dish of saffron rice, chicken, sausage, seafood, peas and peppers, cooked in a large round pan with a flat bottom and two handles is called Paella Valenciana outside Spain. The real Paella of Valencia is more austere- the saffron flavoured and coloured rice is mixed simply, often with chicken and green peas but without sausage and pimientos.
